Crockpot Honey Garlic Chicken

Again, no photo!! Grrr I am annoyed about that because it looked beautiful!!

After all that soaking in the marinade it was super tasty!!

It just fell apart it was so tender and juicy .. mmm mmm!!

So yes, the review is a thumbs up for this one!

I paired it with some jacket roasted potatoes, peas, and carrots. Yummo.

I would usually make 2 dinners out of a whole chicken, but we had a friend over, and it was so nice we ate extra so it only did one dinner, and then some for sandwiches for lunch.

Crockpot Fajitas

Ooo look, 2 pictures for this one (to make up for the lack of pictures in the others!!)

Yes, this one was a good one too!

Next time I'll probably use chicken instead of beef (you could choose which you wanted to use on the original recipe) just because it was a little weird having beef with the salad stuff. You could do up different veges to suit the beef, like green beans and cabbage or something and have it all warm in the wrap maybe??

Anyway, the flavours were nice and everyone liked it (except Miss 1yr, but that's because she's not that into beef - she liked the avocado I spread on the wrap!)



(I put lettuce, tomato, avocado, and some sour cream with it)
They were nice, I'd say this is a goodie :-)

Island Chicken Review

YAY I am stoked to say that this one was another winner!!
(though no pic again sorry!)

Really nice tasting chicken, I would probably leave out the oil next time though and then use the liquid to make into a sauce for the top (time permitting). I would have made it this time, but it was just too oily. I don't know why you really need the oil?? I don't think it's necessary. (it's even superfluous .. just because I like the word hehe)

Easy Crockpot Mongolian Beef Review

This was another winner :-)

I think you were probably supposed to cut up the beef, and I did intend to - I just ran out of time so I chucked the beef in as steaks instead.
They turned out fine that way too! 

Because they soak in the marinade whilst freezing (and then whilst defrosting too I suppose!) the flavour is really nice and soaked in.
The liquid was perfect over the rice too, the rice soaked it up and made it taste really yummy.

Applesauce BBQ Chicken Review

Sorry no pictures again for this one. It sometimes gets a little crazy come dinner time and I just want the kids fed so they stop being crazy people!

Verdict - thumbs up! 

Another success (thank GOODNESS!) Weird combination with the apple and the BBQ, but it works!
Recommended, I'd happily eat it again :-)

Orange Chicken Review ..

So I have a semi-review for this one.

This was the one recipe that I stuffed up a little. 

I forgot to buy the oranges and the orange juice (probably quite a major part of the recipe since it's in the title!! Oops!) I replaced the orange juice with tropical juice and left the orange out.

(this left out the juice of 2 oranges, 1/4c orange juice, and the zest from 1 orange)

It was DISGUSTING!! I am sorry to say I will NOT be making this one again in a hurry!
 (and am wondering what to do with the other one I still have in the freezer!)

It was an oily gross mess. I ended up pulling out the chicken from the sauce and just having it dry on dry rice with boring old steamed brocolli and boiled carrots. It was NOT a nice experience :-(

I really can't say if the original recipe would be a success or not since I deviated from the original! If you make it properly be sure to let me know if it works! I would suggest though leaving out the oil. I really don't think it's needed and it just makes it oily and yuk!

On the plus side, the peanuts I put on top went down a treat!

Fairy skirt

I am revelling in having a little girl to dress up after having 2 boys!
I recently made this little fairy skirt which can be worn over pretty much anything to make it look super cute! 



A piece of ribbon (about 50c) and some tulle (about $1) made for a cheap extra pretty look :-) (I got 2 skirts out of it too!)
I just did a running stitch along the top of the tulle, gathered it, and pinned the ribbon over the top. Then sewed along the top to hold it and trimmed the jagged bits with scissors.

Recycled sheet cot duvet cover

I found a beautiful retro sheet at a 2nd hand shop the other day for the grand old price of $2. I also grabbed some 20c buttons (for the whole packet I might add - there were about 6 in there!).
With these fantastic finds I made my little girl a cot duvet cover! I had bought an inner and a cover second hand a while ago in fantastic condition, but wanted a second cover so she could still use the duvet while I washed the cover. It was super easy to make, I just copied the one I already had, it took me one afternoon and it was ready to go.

The bonus is that she loves it too :-)



I guess I could do the same sort of thing with 2 sheets to make a single duvet cover too - a plain on one side and patterned on the other .. must keep that in mind :-)

Pork Cider Dinner

I made this Jamie Oliver recipe ages ago and although this particular before picture looks good - I didn't bother with an after picture as I cooked it too long and hot and burnt it oops! 



However, since then I have tried it in the slowcooker instead (with a cup less liquid) and it turned out yum :-)
Plus it's a great excuse to have some cider since you don't use a whole bottle in the dish ;-)

Story of 2 moths..

A while ago now, I was at home one evening just falling to sleep when a moth fluttered around my ear - it was dark and I was half asleep and flicked at it with my hand to get rid of it when it decided it would actually be a good idea to go INSIDE my EAR!! AGHHH!
It was SOoo horrid and also quite funny at the same time - all I could hear was a fluttery noise that wouldn't go away! Hubby was out playing games with friends and after I had tried to entice it out with a bright light (which failed) I text him my dilemma.  Luckily he was playing with a GP so I was able to get some free medical advice that I should pour oil in my ear and it should float out. Well I tried that - and squirting water  - fail.
At least by now the fluttering had stopped since I had obviously drowned the thing!
By then hubby was home and tried getting it with tweezers .. to no avail.
I gave up for the night and went to sleep (YUKYUKYUK grossing out that there was a MOTH in my EAR!!)
In the morning (it was the weekend so I was not keen to go to the doctor since it would cost lots) I even tried the vacuum cleaner to suck it out!
I finally admitted that I needed to pay for medical help so headed off to our local out-of-hours medical center (lucky we have one really!) and got them to flush it out with water (which took about 5 seconds with the right tools!).
Funnily the GP that hubby had been playing with the night before was the doctor working that day! It was a pretty gross, hilarious, and embarrassing adventure in all and boy was I glad to have that moth out of my ear!!

The other moth was the one that reminded me that I hadn't written up that story about the first moth so thought I probably should. I saw it on the wall the other night and it was such a beautiful light whitey green I thought I just had to take a picture of it. Funny, because if it was sitting on a dark surface I probably would have thought it wasn't all that pretty, but on the cream background it looked amazing! (the photo doesn't really do it justice).


So obviously the moth-in-ear incident hasn't turned me against moths (though I did make sure to remove one from above the bed last night!)

What to do with leftover Porridge .. ?

Thanks to good ol' Google, I found this link at SouleMama HERE (just scroll down to nearly the bottom .. there are some beauty pics on the post too!) with a recipe for Muffins using left over porridge (aka oatmeal). 


I doubled the recipe since I had quite a bit of porridge. Luckily I didn't completely double the honey/maple syrup because they are pretty sweet and honey-ish - YUM but probably not so healthy! hehe 
DELISH to eat warm on a cold winters day (and better than throwing out the porridge!) :-)

Chicken Cacciatore review .. and costings for Frozen Slowcooker Dinners

So we had our first meal from the frozen slowcooker stockpile last night.
 (see this post for info about that)

Chicken Cacciatore!
The results are in .. thumbs up :-)
I put it over spiral pasta (after googling what usually goes with it!) and I would recommend adding some greens but it slipped my mind last night (and Miss 18months was HUNGRY .. NOW!)



Little Miss 18months decided she wanted 2nds and then 3rds - and Master 4yr declared it to be delicious. As for the more 'aged palates' we thought it was 'nice'. Not blow-me-away material but filled everyone up and tasted good. So all in all a success. It made enough for dinner for equivalent of 4 adults plus some left for a lunch.


Would I use the recipe again? YES. (you can access it on my recipes tab)

Now for the costings.
I was asked how much it had cost to purchase all the food for the meals so here is the break down for you.
Bearing in mind that the chicken was cheap (not-free range) except for the whole chicken and the pork roast was on sale so cheap (and HUGE .. I am a little worried it won't fit in my slowcooker!!)

ziploc bags - $20 - had some left over, and you can wash and reuse these so won't have to re-buy them
meat - $220 - bearing in mind that I didn't buy any beef because we have our own homekill to eat
other sauces/herbs etc. - $98 - bearing in mind that I had some of the ingredients already - though I also had some leftover sauces/herbs etc. so I guess it evens that out really
veges - $30 (roughly) - also had some of these left over (mainly onions)

TOTAL - $380 - also bear in mind (there seems to be a lot of bearing in mind sorry!) that most dinners will need to be served over something e.g. pasta, potatoes etc. and should probably have fresh veges added (or frozen) 

So .. do I think it saved me $? YES. I usually do a fortnightly shop and spend roughly $300 give or take so about $400 for a months worth of meals is $100 cheaper. (and with one day of hard work, much easier too!)

Here is an easy list that I used to have next to you while you stuff things into ziploc bags.
I ticked each item off as I went so I knew what I had put in.
(I recommend you double check I have it right!)

Crockpot Applesauce BBQ Chicken
Ingredients
•  4 boneless skinless chicken thighs
•  1/2 t ground pepper
•    2/3 cup chunky applesauce
•    2/3 cup BBQ sauce
•  2 T brown sugar
•    1 t chili powder
Crock Pot Maple Dijon Chicken Thighs
Ingredients
•    6-8 Chicken thighs
•   1/2 C Dijon Mustard
•    1/4 C Maple Syrup
•    1 T Rice Wine Vinegar
•    1 can of Sliced Mushrooms, drained
•    1 onion sliced
Beyond Easy Pulled Pork
3.5-4.5kg pork shoulder roast
2 onions, sliced
Dry Rub
3 tbsps chili powder
1 tsp coriander
2 tsps cumin
2 tsps onion powder
1 tablespoon dried parsley
2 tsps sea salt

•     450g stew meat
•     2 tsp. olive oil
•     1 onion, thickly sliced
•     1 tbsp. minced garlic
•    1/2 cup soy sauce
•    1/2 cup water
•     1/2 cup brown sugar
•    1/2 tsp. fresh minced ginger
•     1/2 cup hoisin sauce

Crockpot Chicken Tacos
Ingredients
•             1 chicken taco seasoning packet or use your own homemade seasoning
•             3 chicken skinless boneless thighs
•             2 c salsa
Island Chicken
Ingredients
•   6 skinless chicken thighs boneless skinless
•     3 T of lemon juice
•   Zest of 1 lemon
•    2 cloves of garlic diced
•    2 t of dried oregano
•  2½ t of soy sauce
•  1/2 c of vegetable oil
•    1/2 c of chicken stock
•     salt and pepper to taste

Hearty beef stew recipe
Ingredients
•    450g stewing beef;
•    2 tbsp oil
•    4 cups beef stock;
•    1 cup onion, chopped;
•    1 cup celery, chopped;
•    3 carrots, peeled and chopped;
•     2 can diced tomatoes;
•    ½ tsp fresh rosemary, finely chopped;
•      ½ tsp fresh thyme, finely chopped;
•     Sea salt and freshly ground black pepper to taste;

Crock-pot Fajitas
Ingredients
•    1 large onion cut into 1/2 in strips
•     1 green bell pepper cut into 1/2 in strips
•   1 red bell pepper cut into 1/2 in strips
•     900g stewing beef
•      3/4 cup water
•     2 tbsp. red wine vinegar (I just used regular vinegar)
•   1 tbsp. lime juice
•   1 tsp. ground cumin
•    1 tsp. chili powder
•      1/2 tsp. pepper
•      1/2 tsp. salt
•     1 garlic clove
Crockpot Balsamic Glazed Drumsticks
Ingredients
•   8 chicken drumsticks
•  3 tablespoons coconut oil (olive oil would work too!)
•   1/2 cup balsamic vinegar
•     3 tablespoons soy sauce
•    1 tablespoon honey
Crock Pot Orange Chicken
Ingredients
•    450g. boneless, skinless chicken thighs (cut into bite size pieces)
• 3 T Olive Oil
•    juice of 2 oranges
•    zest from 1 orange
•     1/4 C of Orange Juice
•    1 t fresh ginger
•   3 T Soy Sauce
•      2 T hot sauce
Crock-pot Honey Garlic Chicken
Ingredients
•   Whole Chicken 
•             5 garlic cloves chopped
•    1 tsp. oregano
•   3/4 cup soy sauce
•       1/4 cup ketchup
•    1/2 cup spicy honey bbq sauce
•  1/3 cup honey
•    pinch of salt
•   dash of pepper

Ingredients
•   1.1kg cubed beef (stew meat)
•     1 packet Dry Onion Soup Mix
•    1 can Cream of Mushroom Soup (although Cream of anything will work)
•   2 cups beef beef broth or stock
•       Salt & Pepper
Crockpot Teriyaki Chicken
Ingredients
•    4 boneless skinless boneless chicken thighs
•     small bag of baby carrots (or chopped up normal ones)
•     2 large cans of pineapple, undrained
•   4 garlic cloves, chopped
•  1 medium red onion, cut into chunks
•   1 cup Teriyaki Sauce 
Buffalo Chicken
Ingredients
•  4 chicken boneless skinless thighs
•    340g bottle of hot sauce 
•  1/2 package of dry ranch dressing (28grams)
Crockpot Garlic Pesto Chicken
Ingredients
For the Chicken
•    ¾ bottle (265ml) of  Herb and Garlic Marinade with lemon juice (or similar)

1 large jar chunky applesauce
2 bottles spicy BBQ sauce (I used HP brand)
1 bottle garlic and herb marinade (I used Nandos sauce as I had some in the fridge)
2 bottles buffalo wing sauce (I used the HP sauce instead for this - you could make your own)
2 can cream mushroom soup

2 pkg ranch dressing mix (I bought in bottle, not pkg)
2 package onion soup mix

Crockpot Applesauce BBQ Chicken (review here - thumbs up) 
Ingredients
·         4 boneless skinless chicken thighs
·         1/2 t ground pepper
·         2/3 cup chunky applesauce
·         2/3 cup BBQ sauce (I used Homebrand)
·         2 T brown sugar
·         1 t chili powder
Instructions
1.       Spray Crockpot with non-stick cooking spray, or use a Crockpot liner for easy clean-up.
2.       Place chicken breasts on bottom.
3.       Mix all remaining ingredients together, and pour over chicken.
4.       Cook 6-8 hours on low setting. Serves 4.

Ingredients
·         4 chicken boneless skinless thighs
·         340g bottle of hot sauce (I used HP brand Spicy BBQ Sauce)
·         1/2 package of dry ranch dressing (28grams) (I used a squirt of bottled ranch dressing)
·         2 tbsp of butter*
Instructions
1.       Spray your crock pot with non-stick cooking spray
2.       Place chicken in (I used mine frozen)
3.       Mix the hot sauce with the ranch mix and pour over chicken
4.       Cook on low for about 6-8 hours
5.       1/2 hour before serving add butter and shred chicken.
6.       Serve on rolls for a delicious sandwich (I topped mine with Ranch Dressing)

Crockpot Garlic Pesto Chicken (review here - thumbs up)
Ingredients
For the Chicken
·         ¾ bottle (265ml) of  Herb and Garlic Marinade with lemon juice (or similar)
·         3 T of pesto
·         3 boneless skinless chicken thighs cut into 2" pieces
Instructions
For the Chicken
1.       Cut chicken into 2" pieces
2.       Pour Lawry's marinade, olive oil and pesto on the chicken pieces
3.       Marinate overnight if you have time
4.       Toss it in the crockpot on low for 6-8 hours

Crock Pot Maple Dijon Chicken Thighs(review here - thumbs up)
Ingredients
·         6-8 Chicken thighs (bone in)
·         1/2 C Dijon Mustard
·         1/4 C Maple Syrup
·         1 T Rice Wine Vinegar
·         1 can of Sliced Mushrooms, drained
·         1 onion sliced
Instructions
1.       Spray crock pot with non-stick cooking spray
2.       Place chicken in crock pot with mushrooms and onions
3.       Mix together mustard, syrup, vinegar and pour over
4.       Cook on low for 6 hours

Beyond Easy Pulled Pork (review here - thumbs up)
3.5-4.5kg pork shoulder roast
2 onions, sliced
Dry Rub
3 tbsps chili powder
1 tsp coriander
2 tsps cumin
2 tsps onion powder
1 tablespoon dried parsley
2 tsps sea salt

Mix all dry rub ingredients together.  Rub the entire roast with the dry rub (you should use it all.)  Place a layer of onions on the bottom of your slow cooker.  Place the roast on top.  Put the rest of the sliced onions on top of the slow cooker.  NO LIQUID NECESSARY!  Cook the roast on high for 5-6 hours and then turn down to low for another 3-4 hours or until the roast is literally falling apart and easy to shred.

Ingredients
·         450g stew meat
·         2 tsp. olive oil
·         1 onion, thickly sliced
·         1 tbsp. minced garlic
·         1/2 cup soy sauce
·         1/2 cup water
·         1/2 cup brown sugar
·         1/2 tsp. fresh minced ginger
·         1/2 cup hoisin sauce
Instructions
1.       Freezer directions- dump all ingredients into a labeled freezer bag, seal, mix up, freeze flat. It's as easy as that!
2.       When you're ready to cook- take the bag out of the freezer the night before and let it defrost in the fridge. The next morning dump the bag into the crockpot and cook on low for 6-8 hours. If you're going to be longer just add a bit more water so it doesn't dry out. Serve with fresh slice green onions and rice. Yum!


Crockpot Chicken Tacos (review here - thumbs up)
Ingredients
·         1 taco seasoning packet or use your own homemade seasoning
·         3 chicken skinless boneless thighs
·         2 c salsa
·         ¼ c of olive oil
·         ¼ c water
Instructions
1.       Take 1 chicken taco seasoning packet or use your own homemade seasoning and cover the bottom of the crockpot
2.       Lay chicken on top of the seasoning.
3.       Cover chicken with salsa.
4.       Pour the olive oil and water over the top of everything. Do not stir.
5.       If frozen should take 6 hours on high, fresh less time.
6.       Shred chicken and then put back in crockpot for 30 minutes.
7.       Serve on tortillas with sour cream, cheese and a squeeze of lime.


Ingredients
·         6 skinless chicken thighs boneless skinless
·         3 T of lemon juice
·         Zest of 1 lemon
·         2 cloves of garlic diced
·         2 t of dried oregano
·         2½ t of soy sauce
·         1/2 c of vegetable oil
·         1/2 c of chicken stock
·         salt and pepper to taste
Instructions
1.       Mix all the ingredients, except the chicken broth in a bowl and marinade overnight.
2.       Pour the marinaded chicken and ingredients into the crock pot, add the chicken stock and cook on high for 4-5 hours


Crock Pot Chicken Cacciatore (link here to verdict .. thumbs up)


Ingredients:


·                     8 chicken thighs boneless skinless
·                     28 oz can crushed tomatoes
·                     1/2 red bell pepper, sliced into strips
·                     1/2 green bell pepper, sliced into strips
·                     1/2 large onion, sliced
·                     1 tsp dried oregano 
·                     1 bay leaf
·                     salt and fresh pepper to taste
·                     1/4 cup fresh herbs such as basil or parsley for topping

Directions:

Quick method: Season chicken with salt and black pepper and place in the slow cooker. Pour tomatoes over the chicken, top with onions and peppers, add oregano, bay leaf, salt and pepper, give it a quick stir and coverSet crock pot to LOW 8 hours or HIGH 4 hours. When the timer beeps, remove lid and keep the crock pot on HIGH one hour to help it thicken.

Remove bay leaf, adjust salt and pepper and enjoy! 

Hearty beef stew recipe  (review here - semi-okay)

Serves 4

Ingredients

  • 450g stewing beef;
  • 2 tbsp oil
  • 4 cups beef stock;
  • 1 cup onion, chopped;
  • 1 cup celery, chopped;
  • 3 carrots, peeled and chopped;
  • 2 potatoes, peeled and cubed (optional);
  • 2 can diced tomatoes;
  • ½ tsp fresh rosemary, finely chopped;
  • ½ tsp fresh thyme, finely chopped;
  • Sea salt and freshly ground black pepper to taste;

Preparation

Freezer directions- dump all ingredients into a labeled freezer bag, seal, mix up, freeze flat. It's as easy as that!

1.       Place onion and pepper strips in bottom of crock-pot. Place meat on top.
2.       Mix water, vinegar, lime juice, and spices and pour over meat/pepper mixture.
3.       Cook covered on low for 6-8 hours
4.       Place on warmed tortilla, top with lettuce and cheese. You could also top with sour cream, guacamole, salsa, or cilantro. Serve with Spanish rice and enjoy!


Crockpot Balsamic Glazed Drumsticks(review here - thumbs down)
Ingredients
·         8 chicken drumsticks
·         3 tablespoons coconut oil (olive oil would work too!)
·         1/2 cup balsamic vinegar
·         3 tablespoons soy sauce
·         1 tablespoon honey
Instructions
1.       Put all ingredients into a ziploc bag and you can either freeze for a make ahead meal or let marinade overnight
2.       The next morning just dump it all in the crockpot and cook on low for 6-8 hours.
3.       Enjoy!

Crock Pot Orange Chicken (review here - thumbs down!)
Ingredients
·         450g. boneless, skinless chicken thighs (cut into bite size pieces)
·         3 T Olive Oil
·         juice of 2 oranges (I forgot this)
·         zest from 1 orange (I forgot this too)
·         1/4 C of Orange Juice (I used Tropical Juice as I forgot to buy this also!)
·         1 t fresh ginger
·         3 T Soy Sauce
·         2 T hot sauce (I used HP Spicy BBQ sauce)
·         Chopped Peanuts (low or no salt) for topping*
Instructions
1.       Spray Crock Pot with non stick cooking spray
2.       Place cut chicken into crock pot
3.       Mix the rest of the ingredients together except for peanuts and pour over chicken
4.       Cook for 4-6 hours on low
5.       Serve with Stir Fried Veggies or rice or both! and top with chopped peanuts


Crock-pot Honey Garlic Chicken (review here - thumbs up)
Ingredients
·         Whole Chicken
·         5 garlic cloves chopped
·         1 tsp. oregano
·         3/4 cup soy sauce
·         1/4 cup ketchup
·         1/2 cup spicy honey bbq sauce (I just added honey to the HP Spicy BBQ Sauce)
·         1/3 cup honey
·         pinch of salt
·         dash of pepper

Instructions
1.       Place Chicken in crock-pot.
2.       Mix spices, soy sauce, ketchup, bbq sauce, and honey. Pour over chicken.
3.       Cook on low 6 hours.
4.       I split the leg quarters but you don't have to.


Crockpot Beef Tips & Gravy
Yield: 4 servings
Ingredients
·         1.1kg cubed beef (stew meat)
·         1 packet Dry Onion Soup Mix
·         1 can Cream of Mushroom Soup (although Cream of anything will work)
·         2 cups beef beef broth or stock
·         Salt & Pepper
Instructions
1.       Add beef cubes to Crockpot, season with salt & pepper.
2.       In bowl combine soup mix, soup & broth, stir to combine.
3.       Dump mixed ingredients over top of beef, stir.
4.       Cook on low 6-8 hours.

Yield: 4 servings
Ingredients
·         4 boneless skinless boneless chicken thighs
·         small bag of baby carrots (or chopped up normal ones)
·         2 large cans of pineapple, undrained
·         4 garlic cloves, chopped
·         1 medium red onion, cut into chunks
·         1 cup Teriyaki Sauce

1.       Add all ingredients into Crockpot
2.       Cook on low temperature 6-7 hours
